Imagine you're holding a balloon, and you blow it up really fast. That's kind of what's happening in the star's atmosphere during these flares. The hot, swirly gases are moving really quickly, and that's what's making the light change.
Technical definition
A measure of the number of electrons per unit volume in a plasma, typically estimated using spectroscopic observations of specific atomic transitions.
